Apple Oat Sweetbread

Leek, Potato, Corn Frittata

  • 1 c unsweetened applesauce
  • 2 eggs
  • 1/2 c oil (I used canola oil)
  • 1 t vanilla
  • 3/4 c whole wheat flour
  • 3/4 c white flour
  • 3/4 c white sugar
  • 1/2 c muesli OR oatmeal + extra
  • 1 t baking powder
  • 1/4 t baking soda
  • 1/2 t salt
  • 1 t cinnamon OR Five Spice OR Apple pie spice OR pumpkin pie spice


Combine flours, 1/2 c muesli/oatmeal, sugar, baking soda, baking powder, salt, and spices. Set aside.

Mix applesauce, eggs, vanilla, and oil until combined. Add dry ingredients and mix on lowest power (or stir by hand) until just moistened. Pour into greased loaf pan. Sprinkle extra muesli down the center of the pan.

Bake at 350F for 60 min or until it tests clean. Cool for about an hour in the pan, then move to a wire rack to cool completely. Ours lost a few slices on the way to the cooling rack, because that’s the best part of homemade bread.
