Carrot Pumpkin Bars
These are a great early fall treat when you start craving pumpkin
Pumpkin Mix Ingredients
- 2 c flour
- 1 t Five Spice (or pumpkin pie spice, or cinnamon, or whatever “baking spices” you happen to have)
- 2 t baking powder
- 1 t baking soda
- 1/3 c butter, softened
- 1 c white sugar
- 1/2 c brown sugar
- 3 eggs
- 1 can (15 oz) pumpkin
- I c shredded carrots
Cream Cheese Mix Ingredients
- 4 oz cream cheese
- 1/4 c white sugar
- 1 T milk
Directions
Mix flour, spice, baking powder, and baking soda; set aside. Cream butter and sugars until crumbly. Add eggs, pumpkin, and carrots and mix until well combined. (Note: it will look really gross at this point. Keep going.) Add flour mixture and mix until combined. Pour into greased 15×10 jelly roll pan.Mix cream cheese mix ingredients until smooth. Spoon over pumpkin mix and swirl.
Bake at 350F for about 30min, or until a toothpick in the center comes out clean.
A note: 4 oz of cream cheese is half a package, which is frustrating. When I make this, I double all the ingredients for the cream cheese mix, and freeze half of it for next time.
