Focaccia Deli Sandwich

This sandwich rises or falls on the quality of the ingredients (particularly the pesto), so spring for the best you can afford

Ingredients

  • 1 loaf focaccia
  • 1/4 lb *each* of 3 different lunch meats (pastrami, turkey, and ham are good)
  • 6 slices of *white* American cheese (see note)
  • 1/4 – 1/2 cup pesto
  • 1/2 onion, sliced into rings

(NOTE: yes, even if you don’t like “processed cheese.” You need it to be American so it will melt, and white American cheese is tastier, I promise)


Directions

Slice your focaccia in half across the middle and slather the cut edges liberally with pesto.

Starting from the bottom, layer: meats, onions, then cheese. (This is important so the onions don’t slide out.)

Replace the top and wrap the whole thing tightly in foil. Bake at 350 for 20-25 minutes. Let cool, then slice into 6-8 servings.

Serve with mints, if you like your coworkers.
