Thanksgiving Cottage Pie
This is loosely based on the “Shepherds Pie” we used to eat growing up. Amounts are VERY rough estimates. Use what you have.
Ingredients
- about 2 cups shredded/cubed cooked turkey
- about 1/2 cup gravy
- 1 can green beans, drained
- 1 can corn, drained
- about 2 cups mashed potatoes
- about 1/2 cup shredded cheese
Directions
- Sprinkle turkey in the bottom of a 9″ pie pan. There should be enough to cover the bottom of the pan.
- If your gravy has solidified, heat it until it’s liquid again. Pour on top of turkey. Mix up the turkey and gravy.
- Sprinkle the green beans and corn on top.
- Spoon mashed potatoes evenly across the top and all the way out to the edges to form the “crust.” Sprinkle with cheese.
- Bake at 350 for 25-30 minutes. The cheese should be melted and just starting to brown.
